More specifically, what do you use for a waterproof jacket?

IMO, the clothing you wear doesn't need to be waterproof, you still need to have a lot of mobility, just stack on the layers, I wear 3 layers top and bottom.

Pretty much what the above poster said. Layering is the way to go. I do just fine with two layers top (three including lifejacket- they do make a difference!) and two bottom. A windbreaker is always helpful for the wind and rain but generally waterproofing isn't necessary except for wet days.

Light neoprene is a good base layer, 1mm-2mm. NRS hydroskin is a good product, lightweight and allows for flexibility. Anything with wool (especially for the feet) is also good.

Unless its raining more than 20-30 mm, waterproof jacket's not really necessary. (if its heavy rain, it keeps the water and cold out, keeps the warmth in)
Generally though, the only times you'll be cold is before the paddling and about 5-10 min after paddling as you warm up pretty quick during.
